Super Green Pea Gazpacho Smoothie with Coconut Yoghurt

Ingredients

  • 80g frozen peas, cooked
  • ½ a ripe melon, peeled and cut into cubes
  • Juice of 1 lime
  • A dash of honey
  • 250ml apple juice
  • 2 tbsp coconut yoghurt (optional)

Method

  1. Blanch the frozen peas in boiling water for 1 minute and drain.
  2. Put all the ingredients into a food processor and blend until smooth.
